On Monday, I told you guys about the candied jalapenos for the first time. I mentioned that I’d be sharing a recipe featuring them later this week and without further adieu, here it is!

Now before you say “CHICKEN burgers?!?!” hear me out! These aren’t some dry boring chicken burgers like you’ve maybe had in the past. These burgers are packed with flavor from lots of spices, ooey gooey cheddar cheese, and those delectable candied jalapenos…so you know they are sosososo good.

The melty cheddar cheese and chipotle barbecue aioli put these burgers over. the. top. Period. But before you place that burger bun on top, make sure you add a few more of the candied jalapenos just because 1. they’re so good 2. they give the perfect flavors both in and on top of this burger and 3. you’d be missing out if you didn’t.

I don’t know about you, but I’m making the most of my grill before it’s time to put it away for the season. I figure that we’ve got about 8-10 weeks of grilling left here in Maryland and I’m grilling up a storm until then.

To make the burgers, you’ll need ground chicken breast. And, sure you could also make this recipe with regular ground chicken, ground turkey, or ground beef. It’s up to you!

Chop the candied jalapenos. Add them to a bowl. Add the ground chicken breast as well as the spices.

With clean hands, toss the ground chicken gently until everything is mixed in. Don’t over mix.  Form three burgers of equal size. You could make them into quarter pound burgers and make 4, but they’d be pretty small. If you’re serving more than 2-3 people, I recommend buying extra ground chicken and upping the spices accordingly.

Combine the mayo, barbecue sauce, and chipotle in adobo to make the aioli.

Light the grill and let it get as hot as possible. Spray the grill with cooking spray. Add the burgers. Cook for 5 minutes on high. Spray the burgers with cooking spray directly before flipping. Cook for another 5 minutes.

Because uncooked chicken is not a good idea, I use an instant meat thermometer before adding the cheese. This ensures that the center is cooked sufficiently (160 degrees is what you’re looking for).

Add the cheese and cook for 1 more minute. Toast the buns and remove the burgers from the grill.

Smash an avocado with some salt.  Slice a tomato. Place some avocado on the bottom bun. Add a slice of tomato. Add the burger. Add some chipotle barbecue aioili and more candied jalapenos.

These should be called the best chicken burgers ever!

Ingredients

  • For the aioli:
  • 2 tsp pureed chipotle in adobo (available in the Mexican aisle)
  • ¼ cup barbecue sauce
  • ¼ cup mayonnaise
  • For the burgers:
  • 1 lb ground chicken breast
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp cumin
  • ¼ tsp smoked paprika (or regular paprika)
  • ½ tsp salt
  • 2 tbsp chopped candied jalapenos (or pickled jalapenos)
  • buns for serving
  • 1 avocado for topping
  • 1 tomato for topping
  • 3 slices cheddar cheese

Notes

Chipotle in Adobo are one of my favorite ingredients. I like to puree or chop the entire can, then store them in a ziploc bag in the freezer. Just break off a piece or thaw the bag and you’re ready to go.
